For undergraduate prerequisites, Organic Chemistry does tend to be the hardest for people; however, it will depend on your major, your university, and how you learn. For instance, I was a genetics major and my most difficult subject was Advanced Genetics. In veterinary school, the hardest is often Anatomy simply because it is so dense with material to memorize. But again, it will depend on what comes naturally for you.
