I am a EMT-b student about to take my practical. I’m wondering if anyone has any advice on where to find jobs in NY?

There are many options. If you are in the NYC area which I think your profile shows us.. the fire dept often has a test to be a hired.
If the really busy work schedule is not your thing, companies like Empress ( https://empressems.com/) or follow a reddit thread (https://www.reddit.com/r/NewToEMS/comments/15c2ioo/wondering_about_nycs_private_ems/?rdt=56335) that may help you with unfiltered information.

I would say, research the companies before you jump in.
You can also do a Per Diem for local towns and cities. This may give you a lot of different types of experience.
You need to ask yourself. Do you want to be the EMT on site for that car accident or do you want to be the emt that helps people at an amusement park. I have done both in the past.
Amusement parks can be fun and valuable .. take a look at Rye Playland/ Ice Rink for opportunities as an example. Of course there is also the bigger parks like in New Jersey.
Another option is you can be an EMT in a corporate building. Some Security companies also hire EMT's
