What are some possible reasons for someone to get their pay docked in the heavy equipment operators field?

One way to get your pay docked is if you damage the equipment or damage anything on the job site. I think this is what you are looking for.

The employer will deduct for payroll taxes (income, social security and medicare), child support if there is a court order, health insurance , 401K. Any other deductions are only made with your permission, such as for uniforms or PPE. This is the best of my personal knowledge.
