Speaking as a former Division 1 college athlete, the best way to impress coaches is to do the exact opposite of showboating: outwork your opponent and never stop hustling. Show great sportsmanship and be the best possible teammate you can be. The great news is, if you work your hardest and be the best teammate you can be, doing those things also increases the odds that you individually and your team will be successful.
Speaking as someone who has also coached sports (though not at the college level), coaches will almost always want the kid who's the best in terms of attitude/work ethic but maybe only above average in scoring/statistics over the kid with amazing numbers but a questionable attitude.

Always do your best, even when no one is looking, play every game to your best ability.
Be humble at all times, respect others on the field. Be a team player. During off season,
practice!
