I think the answer to your question is about integrity. When I worked a part time job (on hourly wage) during college and high school, I usually didn't get to pick my hours. I would have shifts of 8 hrs, or 6 hrs 3 days a week, 4 days a week etc.
That being said, if your hourly job is only over when the work is done, I would recommend being true to yourself and being honest. Don't deliberately work slower to earn some extra cash. Who knows, if you work quickly, you may end up getting a promotion because your boss may see the value you bring to the business!

Thats a great question and it is very similar to my job. What I always think about is am I proud of my work product? Is this something I would be willing to stand behind?
I think if you work very quickly and don't do a good job then this will catch up with you and the people offering the job will catch on and that job will no longer be available.
Also if you work too slowly and never finish, your employer will catch on and you will also be without a job.
So do the best you can and make sure you are proud of your work product.
