Any environment starting out. Front, or back office. The medical assisting field is so broad, that you could pick the specialty you like. What ever you see first, take it. If you like something, like ear nose throat, or orthopedics, keep looking. It’s a lot easier to find a job when you already have one and your foot is already in the door.
