Too many different offices in the UN to specifically track courses like that. Look at the UN website and see the various departments and begin to consider the different types of issues you consider of most importance to you. Look at who works in the UN, their various degrees, what non profits they may have themselves connected to. Choose a major in which YOU are most interested in. Involve yourself in Nonprofits. Get yourself connected to a cause. Dont match your major to a position title unless the major is the only way to get the title position you want. For example, teaching certification.
Read the course descriptions you would be required to complete. What's interesting? You have to do the homework!! If you love math, Great. Do that. If you love music, wonderful. If you are passionate about world hunger then volunteer at homeless shelters, join organizations with that focus and build your resume to look like you truly care about those issues. Dont pick a major related to Health, for example, because you may think you have to. Work experience is far more important than title of degree. I've worked in higher ed for over 17 years and saw too many students make the wrong choices for the wrong reasons....they were miserable and still had a difficult time gaining employment because they couldn't be true during interviews and resumes didnt reflect a passion for their future employment.
