That depends on the state laws in the state where you practice. It is different in every state. The short answer is that there is very little that you can do entirely independently. In Missouri, Vet techs generally need to operate under direct supervision (vet in the room) or general supervision (vet on the premises). They are not allowed to euthanize animals, give rabies vaccination, diagnose, or perform surgery. They are allowed to perform anesthesia, collect samples, and give injections (but not vaccines).
