Hi Trevor! I would recommend Accounting classes. Accounting is the foundation and language of business, and those classes will give you a basic understanding of how to track and record profits/expenses, how to analyze trends, and some basic principles that you can apply for tax purposes as well. Finance classes could also be relevant, but I do think Accounting is the best place to begin.
Some universities also offer an Agricultural Accounting degree, such as University of Illinois, and I would recommend looking into those programs (even if you end up following a different path!) to see how they are structured and what skillset(s) they provide to students.
Good luck!
