Veterinary school trains in the major small and large animal species (dog, cat, horse, cow, small ruminants) as well as birds and exotics. The veterinary board exam (which you would need to pass in order to receive a license to practice) also covers all these species. Once you are a veterinarian you can often choose what animals you'd like to work with, but you would still have the knowledge base to work with other species (e.g. many exclusively large animals vets end up working as small animal vets at some point just given the physical wear of the previous job.)
