Here are a few different options that will allow you to work outdoors with animals:
Zoologist or Wildlife Biologist - To study animals and how they interact with their environment
Marine Biologist - To study sea animals
Conservation land manager - to protect wildlife and open land like forests
Conservation or Forest technician - to track wildlife in their natural environment and ensure they have a healthy environment to live in
Wildlife veterinarian - A doctor for wild animals
Wildlife Photographer - Go on location to snap photographs of animals in their natural habitat for newspapers, magazines, museums, or art galleries. You can also get into videography for television companies like the Discovery channel.

Oh the job that you need to pursue is a conversation agent. You work outside and make sure people obey the laws and make sure that the animals are protected.
