What kind of career opportunities are there for someone with a degree mathematics

It depends on what one good at. Statisticians can earn 6 figure income if the are very good with math and work for financial companies. Other field can work as consultant, research and teaching. I have a friend who work for a semiconductor company and he is responsible for provide Design of Experiment to run test conditions to optimize processes while minimize cost.

I recommend you to ask yourself which field of math are you good at and what would you like to do in the future. Does income a factor to you?
Do a quick survey on Department of Labor of your country and see people with degree in maths/engineering salary. for US, try https://www.bls.gov/

Mathematics gives you a lot of career options. I would encourage you to learn more about what you like about mathematics and then explore what you actually do in that field. For example, if you like statistics, data science is a growing field.
