There are lots of job options! I was a Civil Engineering Major (which requires some geological engineering classes). A few of the options include:
1) Anything in the Oil & Gas industry. These companies love people with relevant engineering backgrounds. Your options are wide open here
2) Construction engineering. You design the plan and execution of a construction project. Big general contractors (e.g., Bechtel, Clark Construction) have lots of these roles
3) Construction management. Managing the day-to-day of construction projects. Big general contractors (e.g., Bechtel, Clark Construction) have lots of these roles
4) Working for a geological/environmental engineering firm. Almost all construction projects need this type of work, so they contract the work out to these engineering firms!

I strongly recommend going into an engineering area that you enjoy! While I don't use the direct skills that I learned in my civil engineering classes much today, I'm very happy to studied it!
