Are there any specific types of projects that I should have on my portfolios when applying to colleges?

This is a great question. You want to definitely make sure that you mention things that will make you stand out greatly. When my young adults were applying to college they had done so many things over the course of their school years. Here's a brief list of what they did to give you ideas on what to include. . . .
TRAVEL ABROAD
• People to People Student Ambassador (United Kingdom/Ireland Delegation and Japan Delegation)
• Member of the French Club (traveled to France and Rome)
• Church Mission Trips (Honduras and Ensenada, Mexico)
COMMUNITY / VOLUNTEERISM
• Sunday School Teacher (1st Graders)
• Medical Explorers Program
• Girl Scouts Volunteer Assistant
LEADERSHIP / ACADEMIC
• Hugh O'Brian Youth Leadership (HOBY)
• Honors Programs (4.0 Recipients, National Honor Society, Beta Club, Spanish Honor Society)
• Student Leadership Teams
• Freshman Class Mentor
• Philharmonic Orchestra
• PROBE Gifted Students
Take your time and think about "all" the things you are currently doing at school and outside of school such as in your community, place of worship, etc. List them out and categorize to ensure you don't miss anything (ie, leadership/academic, travel abroad, community/volunteerism, etc.).
