You asked a good question. The best answer is to be bold and reach out to find one or create your own:
- talk to your professors and your academic adviser
- talk to the head of alumni relations to arrange to meet and talk to graduates in psychology

Here is a helpful story. During my daughter's senior year in high school, the highlight was to be a 3 month internship. Everyone submitted their request and waited - except for one girl. She wanted to have an internship with an EMS unit, so she contactd the local EMS unit and arranged with them and the school to create her own. Not surprisingly, she was the only one to get maximum benefit from the experience. Many, like my daughter were disappointed, as their programs failed to provide expected experiences.

Len Simmons has some great advice. I would also recommend a visit to your college's Career Counseling Office.
Many non-profit organizations post volunteer opportunities at their respective websites. FYI: hospitals and medical clinics are generally non-profits. Volunteer opportunities can be recast as internships! Do you have a VA Hospital in your community? If yes, then stop by to make an inquiry. The National Park Service has both volunteer and seasonal hire positions. You have an opportunity to develop your communication skills and depending on the site, your presentation skills! Such skills are valuable!
