How do severs carry the plates without a big plate?

It takes a lot of practice and balance! Also, bigger hands are beneficial.

Hi Voc ! As a former server, I definitely did struggle with this, but with time practice does make it easy. I would recommend trays though if needed for specific choices. I usually used trays for large tables, especially where there was a lot of hot meals; remember it doesn't matter if you're able to carry it on a tray or just with balancing a couple dishes on your hand, the most important thing is being efficient and minimizing accidents. I use to try to carry hotter plates and soups just with my hands like my other more experienced coworkers, and while I did okay with some of them, the ones where I did struggle I decided to just use a tray. I also think it could be less messy and look professional, my manager or boss would not look down on me for using a tray or another bigger plate as long as I was serving the correct meal and being a helpful server. It takes a lot of practice to get it down, especially when working with soups and hotter items. Sometimes, it does take a little luck too!
