Hi there,
I'm going to go broader here as all of the suggestions already given are really good examples. But something I saw recently that gave me insight on directing was the docuseries from HBO "One Perfect Shot" where directors explain their mind process and everything they needed to accomplish a specific shot in their movie. They literally go inside the shot they chose to give all the details behind getting it done. Your question reminded me of that.

What a fun and unique question. Yes to Pranjal's answer! M.Night movies are so original and often surprising, i.e. "Signs."
I will add:
Movies "Forrest Gump" and "Castaway" directed by Robert Zemeckis. Anyone who can direct a single actor, stranded on a deserted island for most of the movie is pretty amazing, in my eyes.
Greta Gerwig directing "Lady Bird" and "Little Women (2019)."
Jon M. Chu directing "Crazy Rich Asians."
