What are some good high-paying jobs that are in the math or statistics field, that have minimal college.

Well, you cannot have the cake and eat it too.
Based on my experience, good high-paying jobs would typically require high-level training and skills. Currently, data science and actuary are hot areas in the field of mathematics.

Agree that Actuarial Science is a great field. Only need undergraduate degree and then get time and raises while working for studying and passing tests to be credentialed. More info at https://www.beanactuary.org/

The question in my view is not about duration of study and into how many of the various areas of maths you are venturing during your study, but whether you are good in maths in general. If you are good in maths then the disciplines that are "must haves" in your studies are analysis, linear algebra, stochastics, artificial intelligence and numerical maths. That plus good minors particularly computer science, finance or business admin prepares you well for getting well paid entry level jobs. Certainly anything in banking and financial services (think derivatives, hedge funds) will be well paid. Anything in data science & analytics will be well paid in any industry.

I'm not sure what you mean by minimal college. It sounds like you want to reap rewards without doing the work. Any successes you experience in life require some level of work.
Talk to people who are currently in the math and stats field. They can provide insights on the steps they took.

Math is a fascinating subject that will provide you with excellent problem-solving skills that can be applied to many careers. One future option for math students is data science, an area in which more and more companies are looking to hire.

With an undergrad degree, I would suggest targeting an analyst (data analyst, BI analyst) position. If you are still in college I would recommend taking more stat classes. Learn python & sql as well to help you in work.
