What can I do with a major in sustainability studies?
I am considering the possibilities of taking on green jobs (i.e. geen product marketer). How would taking the courses within my major requirements help me in the long-term? Are there recommended minors that would go well with this major. Or, would I be better off with a minor in sustainability studies?

I would say ESG jobs are so in demand right now, and its demand will continue to grow. As it was mentioned in other answers, sustainability could be in many forms. But I would recommend to take business minor, it's important to understand how company/business operates, and will be beneficial with ESG major.

It is commendable that you are pursuing sustainability, so badly needed in this world for the next generations.
Sustainability could be in many forms:
Energy sustainability - solar, wind, and even Fossil energy efficiency improvements and contain other things needs engineering/bio/chem/physics knowledge.
Food sustainability - need agriculture, bio, chem soil science fields.
Animal sustainability - needs bio, animal sciences, marine sciences etc.
In general, all these fields are closely associated with sciences. Additionally, business and finance fields play a major role in decision making, investment into the sustainability fields and pricing of products and services. Depending on whatever you major in, you would need some knowledge of finance, business management, and/or Statistics to have an advantage over others with sustainability major. Whether you minor in a field or just take courses to learn and gain the knowledge is something you will decide as you go forward with the workload.
I am sure your colleagues, professors, guidance counselors and your own acquisition of knowledge will guide you through your academic- journey.
