I'm not 100% sure about anesthesiologist, but I'll tell you a secret... your bachelor's doesn't matter unless your job specifically requires you to have a degree in a specific field(if only I could be a full blown paramedic with my political science and history degree lol) or you do the required classes. But some majors will boost those brain skills more than others!
I'd recommend biology, philosophy, health sciences, anthropology, math and I'd recommend double majoring or minoring in those fields too

Edit, jobs that require specific bachelor degrees are usually STEM fields and some medical jobs e.g engineering and nursing
