What career can I expect with a Professional Writing degree?
I love to write. I've always loved to write. I was looking over my dream college's catalog the other day and saw that there was a "professional writing" major. I am seriously thinking about going with that major, but what kind of job can I expect with it? Will I be doing interesting writing, or will I spend my days writing instruction manuals as my dad predicted?

With an education in writing you can work in any field. Keep in mind that writing is not just fiction or - at the other end of the spectrum - instruction manuals. Potentially any organization or company in every industry needs good writers to help communicate its goals and ideas, whether to investors and customers, or a more general readership.
With a writing degree, or at least some quality education in writing, you could work in journalism (newspapers, magazines or online), public relations (corporations, private organizations, government or political offices) or in an academic field like history or science. Even NASA needs people who can write and describe its explorations of space.
Follow whatever interests you personally and look for a professional field in which you want to be involved. Undoubtedly you will be able to find a writing job in those areas.

What you write is up to you. If you want interesting, major in journalism or science. Learning to write clearly for the consumption of others takes skill, discipline as well as talent. Meanwhile, start writing your own book(s). Writing takes practice like anything else. While you're at it, become merciless editor of your won work. Know ALL the rules and conventions of grammar and style.
