what is the best college courses to take when you want to become a pastry chef and open up your own business ?

Look into Culinary or Baking schools. I would look into your local Junior College and see if they offer any Culinary classes. It's way cheaper and you get to try and see if this career is what you would like to do.
That way, if you realize that this career is not for you, you're not out of $60,000+ for school.
And if this IS the career you want, then you can see if you can transfer or move up the the Baking schools.
I graduated from Culinary Institute of America, Hyde Park, from their Baking and Pastry Arts program. I went through a culinary program at a junior college first, and it helped me be more prepared for the school, as I already knew some of the techniques and skills. The CIA taught me more about plated desserts, mass production, and wedding cakes, along with other skills, like bread baking and confections.

I suggest getting your feet wet first and try to get a job ( part time if you are working) or a stage somewhere that is field related.
I have been a chef instructor and administrator and I will tell you that culinary schools can be a rip off and very expensive. Don’t know where you live but do see if there is a community or local college that you can go to. Some of those programs are excellent and way cheaper. Immerse yourself because going pro is very different than doing it for yourself and family.

Practical experience, determination, and passion often outweigh any college course. Consider working in a bakery or restaurant before enrolling in college classes. This way, you can truly discover if it's something you love, saving both time and money.

Hello! I'm actually a homebased/self taught cake decorator for almost 15 years. I would actually suggest taking business courses. I ended getting a business degree before deciding to make wedding cakes full time. It helped greatly when I started my business, because only 30-40% of my time is spent baking. Most of my time is spent doing administrative work and talking to customers. As far as baking and pastry skills, if you don't want to shell out the money for culinary school just yet, just take some cake decorating courses at your local craft store if they offer them. It will help you, just getting the basics in decorating.

I’m a hobby baker so I’m wishing you the best in your business adventure. You’ve got some great responses here, so I’ll just add that money management knowledge may be as important as baking knowledge in your success. If you’re having trouble finding local classes to learn financing basics, look for online classes or see if there is a Small Business Administration office near you. The SBA often have many classes and other resource to help develop knowledge on how to successfully open a small business.
