Consider places that manufacture transparencies such as car windshields, aircraft windows, flight simulators etc.
The internship may not directly say “Optical Engineering” but could be generalized or design engineering. I worked as a quality engineer in aerospace for a company that made helicopter windshields and airplane cabin windows and we could have used somebody with an optical engineering background.
