Hi! For my company at least, data analytics involves reviewing reporting, identifying and tracking trends, root cause analysis, and based on the results uncovered it can lead to new initiatives and projects. I'm sure the demands can vary depending on the industry, and some of the information may be more intense or difficult to interpret, but at the end of the day it's taking all the information and breaking it down in a way that makes sense to a non-expert.
