The first step toward being an anesthesiologist is getting into medical school. To do that, any undergraduate major is acceptable as long as you meet your pre-med requirements. In fact, a student in a non-traditional major may even be an advantage (biology majors applying to med school are a dime a dozen, but a studio art major will capture someone's attention!). Here are the majors or a few anesthesiologists I work with: Chemistry, engineering, theater, anthropology, biology. To get a leg up on what an anesthesiologist needs to know, you could focus on biochemistry and physiology courses. Major in what interests you, be an exceptional student, rock those pre-med courses and requirements, and you're on your way!

Any 4 year university should be able to provide you with all of the premed requirements (1 year biology, 1 year inorganic chemistry, 1 year organic chemistry + labs, physics, calculus, and biochemistry). I would look at each school individually and see which fits your personality and desired major (does not have to be science) best.
