Similar to what Gabriel has said above, I think the best thing to do at first is to narrow down your interests. For instance, it's a lot easier to learn about NLP as it relates to the media industry than it is to learn about NLP as a whole (because it is such a broad topic).

Once you've identified one or more areas of interest, it should be easier to look for NLP applications in that space, and thus make it less overwhelming regarding where to begin.

NLP includes a lot of different techniques and applications. Depend on the focus, the difficulties and knowledge can be very different. Other than a more formal training in NLP through online courses, I found that medium.com usually have good articles on this subject. E.g. https://medium.com/greyatom/a-dive-into-natural-language-processing-103ae9b0a588.

Note that NLP is still rapidly evolving. It is better to stay on top of the subject to keep yourself updated to the latest technology.
