Hi Diego,
I am a biologist and my friend is a plant geneticist. To do this work, the traditional route is that you are a professor working at a university with teaching and research responsibilities. Your day-to-day could be to teach biology courses to undergraduate students and doing research in the lab. If you are the Principle Investigator (PI) of your lab, you will likely mentor students on their dissertation/theses projects. My friend spends lot of time on research running samples and writing scientific papers. In summary, if you are a plant geneticist at a university, you will likely be expected to teach, conduct research and mentor students on research projects, write research grants and publish papers. Although it seems like a lot of responsibilities to juggle, it can be gratifying work of it's something you are passionate about.
