That depends on the restaurant and varies with each one. Inquire within. Ask the head or Executive Chef to answer this question for you.
Don’t not ask the chef. This will tell them right away that you do not have what it takes to put the work in.

You will most likely be off on Monday’s and Tuesdays and will work Wednesday through Sunday from the morning until they close. To be honest it is rough and not easy but one thing is that if you truly love it you will get excited to go back to work. I was at one point working 16 hour days in Europe and had to walk over a mile to work and back everyday but every morning that I woke up I was so excited to get back in the kitchen and do exactly what I love!
