Office hours as a Vet aren't bad. You have front desk employees, an office manager, and vet techs to help you with a lot of the work. If you own your own clinic, your office hours are whatever you want them to be. Most Vets have Vet Techs come in early and stay late for pet drop off and pick up. My vet owns her own practice. She doesn't get in until 9am and leaves at 4pm and only works Monday-Friday, and closes her office on holidays. But she has vet techs that work 6am-noon. They close from noon-1pm. and another set of vet techs come in from 1pm-6pm. All of her vet techs are part-time.
Some Vets work 40-50 hours per week. It really depends on where the clinic is. Where I'm at, we have ER Animal Hospitals that are open at night and on the weekend, but in smaller towns where there's only one vet, you can expect to work more hours just because of the need. Where my aunt lives, their vet is open monday-friday but is also on call for emergencies at night and on the weekend.
Also, if you're a Vet at a zoo, don't be surprised to be on call 24/7.
One thing I've always wondered about is being a vet at something like a horse track.
