Don't overlook opportunities like classroom settings. Some Sur la Table locations have kitchen classrooms offering a variety of cooking classes (both savory and sweet). The kitchen assistant position helps instructors prepare (mise en place), execute (keep an eye on students, support the chef), and clean (dishes) - but it's a great opportunity to see a variety of menus and learn from the teachers.

It depends on where your passion is and how much you want to work.
when the covid lifts, i would not suggest a cruise ship. but a upscale fine dining restaurant would be my suggestion. working for someone like Chef Izzard out of Chicago.
you can also go on food and wine.com and find out who the up coming chefs are, and try to work for them.
talk to your instructors about their background, this way you can get a feel of the way you may want to go.
