This is a great question! We all want to work for an organization that offers fair opportunities to everyone regardless their gender, race, etc.
I don't have a background in zoology either, but I hope my 10+ HR experience can provide some ideas. :)
I love Nicole's approach and believe LinkedIn is one of the biggest professional network platform that may give you a brief picture of the company's population composition. Also, some companies may also have their efforts on Corporate Social Responsibility (CSR) available on their company website.

If you don't already have a LinkedIn profile, I highly recommend creating one as it'll open you to thousands of people, companies, opportunities and more along your career journey. If you need help creating one, feel free to reach out!
Once you're on LinkedIn, search for the companies you're interested in working at and/or know of for zoology. You can filter by location to narrow down your search. On the company's page, you'll find "See all xxx employees on LinkedIn" on the right-hand side. Click this and you can view the employees who work at this company. This will give you a sense of the different types of people this company hires.
Another way to research on LinkedIn is to search by the career role (example: Zoologist) and filter by location. This will show you the different types of people working in this role. Feel free to check out their profiles to see their background, where they come from, what they do, etc.
