I would suggest that while you are still in college, to get a part time job in a kitchen environment to get some of the basics of being in a kitchen out of the way. Understand, and be immerse in the actual operation of how a kitchen handles dining orders, food prep, food procurement, etc. And if you are able to, find a chef that is willing to take you under his or her wing so you can learn about the various techniques. When you are done w/ college, you will have that on your back plus the academic side of culinary arts so you may be a few steps ahead and look to work in a restaurant kitchen that serves food/cuisine you are passionate about. Or it could be a bakery or cafe. Find your passion and find a chef mentor to work under.

Your school is going to have an internship program I do believe, as well as a placement program. If you are not all ready working in the school itself, I would recommend working at a nearby restaurant that you like so that you can get a feel for what you want to be doing in the field.

The previous three answers have all been great and right on target. My advice is to start with the Culinary Arts faculty and advisors at your school. They are in the position to help you best since you know each other already. Good luck!
