I would recommend getting a degree in Biology. Veterinary schools typically require a you to have a Bachelor's degree and to have completed a number of specific science courses in biology, chemistry, and physics.

There are Universities that off specific undergraduate degrees for Veterinary school (i.e. Pre-veterinary or Animal Science). Most Vet schools require a Bachelors of Science Degree to be accepted. You could get your Associates, however, you probably complete the prerequisites for most Veterinary Schools and will have to take more courses that would cost a lot more money than just getting your Bachelor's Degree.
It doesn't matter what you major in as long as you complete the prerequisites required by each school and every school is different. There is information on specific courses at the AVMA website.
