What classes are extremely beneficial to Environmental Engineering majors?

I was a practicing Environmental Engineer form 1972 thru 2008. My course of education was Chemical Engineering, which I found directly applicable to my activities. Courses in wastewater treatment, industrial hygiene and industrial ventilation were also very useful. Toxicology is also useful. You probably won't be able to fit this into a four-year program, but you can do a little research and identify courses such as the Industrial Ventilation, and Industrial Hygiene that can be picked up after you get your degree.

Environmental Engineering can also include soil and water remediation, the cleanup of chemical-contaminated (often of industrial) sties. This has been a booming business since the 1990's and appears to have a lot of work left to do for years to come. If this type of work appeals to you, then strong courses in organic chemistry water chemistry, and a geology course or two are excellent background courses to consider.
