A guy in my church who just graduated high school is going to the Blackbird Academy in Nashville to learn audio engineering. He said part of the curriculum is to tour with national artists. He also records his own music as well.
The other thing is to be musical yourself. Learn how to play an instrument. Study music theory. Listen and appreciate all forms of music.

Have you checked out the local scene in San Jose? Check the internet and see if there are local studios there. Send a letter, see if you can speak to someone there.
What do you think about when you use the term "Music Production?" Are you interested in recording? Selecting songs and artists? Performing yourself?
All of these might take you in a different direction. Learn music if you don't know it--as Charles suggests. Do you play an instrument? If not, that will be helpful. Study all kinds of music--listen to the aggrangesments, the sounds.
If you can work with a local band like Philson suggests, you can get a feel for the kinds of things the musicians do--how they arrange the songs they play--especially if they are doing covers of other's material.
