What job options or internship opportunities are there for animators?

I'd start off looking for local studios in your area that you can try to work at or even intern if possible. Get a portfolio/demo reel set up online showcasing your best work. The demo reel shouldn't be longer than 2 minutes with your animations and build up a resume of any work history and accomplishments you might have achieved pertaining to animation.

Once you get all that setup you get to experience the joy of sending out hundreds of emails to companies you want to work for.
Also network network network!! If there are animation conventions or networking groups you can get into near you do it asap! Networking is a huge part of this industry in helping get jobs.
