I'm not in the business but would image that there would be more structure and training at a dealer. Techs would likely work on jobs based on training and can specialize more. You may also get to work on more leading edge technology in new cars that due to warranty wouldn't be taken to an independent shop.
I've see dealer techs open their own shops or join specialized independent shops once they're more experienced.

Many auto brands provide extensive, formal training for their dealer automotive technicians or sponsor your training at a technical institute. This can be helpful in learning the wide variety of automotive subsystems. It may also allow you to learn emerging technologies, such as new batteries and related electrical and electronic implementations in the newer vehicles.
I agree with Hassan that working at a dealer for several years allows some people to establish a baseline of experience upon which they eventually join an independent shop or open their own.
