I don't think I can suggest which is the best college to choose in South India if i understand your question correctly. But with respect to the Technology: you can expertise in fields like Data Science, Cyber Security, Cloud, AIML etc.

Instead of talking about specific college, I would suggest, you need to evaluate the college and course based on the placement track record and companies visiting for campus interviews, you can check on fees as well ( if it matter of concern to you) and may be NIRF ranking of these colleges may help to take decision. You should generally join a college where you get company of good students who are highly competitive, selection of peer group matters a lot in your individual development.

Regarding IT Vs CSE or Data science, IT or CSE you can consider siblings of each other and may not have much difference. You can check subjects taught in these courses as each university may have different names for the subjects as well. Irrespective of branch you select, you should focus on learning programming and mastering it.

Data science and Machine learning is new and growing field. However, you can learn it even while doing course in CSE or IT. It is kind of an add on. So does not matter if you don't get admission to specific integrated data science course. It is kind of specialization that you can do later as well.

Please note in a typical machine learning project, the data science work is about 10 to 15% and rest is software engineering. So from requirement perspective, there will be always need for programmers and knowledge of data science will be added advantage.

IT or CSE doesn't make any difference, I would say CBIT is better that VNR. The main problem of joining any university like VIT or SRM is that the strength of campus is very large which will be problem during placements, except that all are good options. Choose the one based on your financials, interests and location choices.
