Hi Hope,

Just to give you a perspective on becoming a sushi chef, traditional way to do so in Japan is to work at a sushi restaurant as apprentice. You will go through rigorous trainings taught by itamae (i.e., master chef), starting from clearing the restaurant, roasting nori seaweed, making perfect sushi rice, etc.). It takes years before you can actually make sushi. Maybe this is an old fashion way. Looking into Japanese or Asian culinary school may be a good way to start.

Sushi is actually super easy to make and easy to customize to whatever you like. To make the sushi rice, you basically make white rice and add some rice vinegar, salt, and sugar before the rice cools down. You can probably find a recipe easily online for the exact measurements and more details. You'll need a bamboo sushi mat and you wrap it in plastic wrap. Then put a sheet of nori seaweed down and put a layer of rice. You can add whatever ingredients you like and then roll it up. Make sure to squeeze the roll as you're rolling so it stays compact. If you're using any kind of raw fish, make sure you get it sashimi grade, so it's safe to eat raw. You can find this at your local Japanese market/grocery store along with other sushi ingredients. A very simple and easy roll to make if you're a beginner is a kappa roll, which is just a cucumber roll. All you have to do is to cut thin strips of cucumber and roll it up. A California roll is just the sheet of seaweed with rice flipped upside down and you add imitation crab, avocado, and cucumber. One of my favorite sushi dishes is uni, which sea urchin. It might sound a little weird, but trust me it is so good. It has a very creamy texture. You can also experiment with hand rolls, which are like cone-shaped rolls. You don't need a sushi mat for that.
