Hi Camila,
I'm not a lawyer but wanted to give some perspective on how I approached AP classes/exams. I wouldn't worry too much about the ones that relevant for your career (as it won't matter long term when you're looking for jobs). I would focus on which AP classes/exams you can take that will help cover some of the GedEd classes you'll have to take in undergrad.
Look into how your future University approaches these exams and if there are classes you could have waived by doing well on the AP exam. For example, I took AP Calculus in high school, I scored high enough that I did not need to take the required math classes in undergrad, saving room for more relevant or fun coursework.
You could use this to your advantage and take classes in undergrad that may give you a leg up in applying to law schools later down the line.
