Mechanic training programs take about a year and involve a mixture of "classroom" time and hands-on working on real cars. What you're looking for are programs with names like "Automotive Technology Training" or "Automotive Specialist Training", but the most important thing is to make sure that the program is accredited, and preferably gives you the opportunity to earn a ASE Master certificate (Automotive Service Excellence Master Technician).

While you're searching for a program or saving up for it once you've found it, you could also find a related job and start getting experience right away. Most car dealerships and larger mechanic shops have roles that don't require you to have a training certificate ahead of time, and the current labor market means they will most likely be hiring! On their own, these types of jobs won't teach you enough to become a certified mechanic, however they'll get you used to working on cars in a shop environment and will be great experience to have on your resume once you graduate from the longer program to get certified.

Some example programs I found in the San Jose area:
Chabot College - Automotive Technology - https://www.chabotcollege.edu/academics/applied-technology-business/automotive-technology/
Silicon Valley Career Technical Education - Automotive Services - https://www.metroed.net/Page/111
