This really depends on the size of the book and what the content and target audience are. I am in medical school and I wrote a chapter in a 100 chapter book and that took me a month due to the amount of research I ended up needing to put into it.

If you are writing a fantasy book this may take some time, but certain authors are able to write massive amounts in a short period of time. Authors like Jonathan Maberry are very prolific and write quickly in topics they enjoy. Other authors take a long time to write, but ensure accuracy in their books like Dan Brown.

So the cheap answer is it depends on what you are looking at writing. Once you finish the book you would look into letting other people read the book to see if there is interest in the book/topic. Once you discover there is interest you can look into publishing which is a bit of a niche business. You will send the book out and see if it grabs interest from the publishers.

If you are attempting to create a universe like game of thrones it can be helpful to write a novella which is a small storyline and find out if there is interest in that storyline before you dive into writing a 800 page book.
