Take as much math and science as you can. In particular, calculus and physics would be very good. If you do well enough in high school and pass the AP test, you can get college credit for them. When I was an undergrad, engineering students were expected to complete differential equations (which came after two semesters of calc), and a year of physics. And this does not include whatever specific classes needed for the type of engineer you want to be.

I'd also suggest English classes. In today's world, it is important to be able to write clearly and concisely to a wide variety of audiences.
