STEM courses are always a safe bet as a foundation. In addition its always beneficial to see what extra curriculum courses are being offered at your school. If not, even consider to take the initiative to push for new courses to be added to the list. Of course, that isn't always the option, but colleges and scholarships love seeing students that are motivated and go the extra mile to gain the knowledge. Especially, when it means to challenge the status quo and push for change. In general you can see AI as an enabler, but its the subject matter expertise that makes the difference and allows to leverage AI. What you can do already today is to see how best efficiently you can prompt an AI to become the results you are looking for.
