Agriculture covers a wide span of the US, depending upon which agricultural division you pursue. The western states have the land base to provide agricultural supplies to feed the US and export to many countries. Since animals are a primary meat food source, the animal husbandry is important. Check out University of Idaho, Alabama, Texas A&M, Washington State University, or UC Davis. Regarding fruits and vegetables seek schools in Arizona, Florida, Texas, California, Iowa, Georgia, New Mexico and Idaho. A secondary product can be fruitful, like growing grape vineyards for wine making and other alcohols. Hemp growth for medical purposes and algae for fuel are another secondary markets from agricultural products.
Enjoy the search for your niche in agriculture as it can result in world travel and unique challenges. Large corporations will challenge small agricultural operations more in the future, so be careful of which side you drive your financial and career path.

If you want an adventure, check out the University of Wyoming! Wyoming only has one state university, and has been able to focus a tremendous number of resources on this school. The campus is beautiful, and I think their course offerings and majors are really up to date. They have a big Ag and Animal Sciences focus which compliments disciplines such as Environmental Sciences and Agricultural Economics. One of the professors in the Ag Econ department leads a student trip to Australia every summer to tour farms and ranches there.
UWYO is one of the more affordable public universities for out of state students, and as a result, the school has a high percentage of students from outside Wyoming. It is in a great college town of Laramie. Wyoming is beautiful with lots of wide open spaces.
A minor draw back is getting there. You can fly directly into Laramie, which might be easier from San Jose than from where I live. A greater number of flights go into Denver which is 2 hours 45 mins drive from Laramie.
