Can i study anatomy and physiology even though I'm still high school ?

Yes, you can study anything you would like at any time, actually. The question is, does your high school offer a class in physiology ? Most high schools do offer classes in anatomy, so you would have to visit the academic counselor office and discuss if it is offered and if you have the prerequisites to take those classes. If it is not doable at your current high school, you can do an independent study online. Most likely your school will offer anatomy, but it's still worth double checking with school administration. You'll want to be absolutely sure and you did not mention which high school you are thinking about.
As a starting point, I would advise that you watch some videos (see the link below) on the subjects as there are some lectures online and you could probably do a search for more. You can start doing it now.
I also want to suggest that you should ask your academic counselor if these courses are being offered in Summer School and consider taking them during the summer. Be assured, that no matter which avenue you take, you can definitely start studying now. Once you enroll in college, there are many courses in this subject and you would have your choice as to what courses to take.

Just for your own fun, you can look up free anatomy apps on the app store and there are a bunch of cool ones out there that allow you to explore the human body. They are usually extremely detailed and contain a bunch of information about a variety of things, for example the origin and insertions of different muscles in your body. They also sometimes contain histology slides which allow you to see different parts of your body up close and can give you a better sense of what's happening on a molecular level.
