My suggestion is to closely examine the Employee Value Proposition (EVP) that IT firms present on their websites. What do they promise for your professional growth? Make an effort to connect with individuals who are employed at these firms and inquire about the authenticity of their EVP. In terms of career advancement, my experience in large IT firms, having spent 14 years in one, is that you can shape your own career path and explore different roles as long as you collaborate with your manager, maintain a growth-oriented mindset, and remain open to new learning opportunities. This will allow you to gain new skills and be prepared for lateral movement. Identifying companies with a conducive culture and work environment for growth and learning will align with what you seek.

Most large organisations do many things using lots of different technologies. I think that you have plenty of opportunities to change from one technology area to another quite easily. It's probably easier to change technology within the same part of the company (e.g. from one software product to another) than it might be to transition between say software tech to hardware tech, but it's certainly not impossible to do.
I would suggest looking at a company that does lots of different things rather than a smaller one that maybe does one or two. The larger companies will have more opportunities to change technology / career.

Continuously learning new skills and maintaining expertise in your base skills will allow you to move and grow in your position within a big tech company. Tech can be more volatile, so do not get discouraged by lay offs or work force reductions. Keep your skills sharp and take part in as many projects as you can handle and you will always be able to find new opportunities. Be sure not to burn any bridges. Sometimes getting laid off is difficult to handle, but try to understand it usually isnt due to your own performance. Good luck
