Consultants are often experts within their chosen field. Since others have listed out many types of consulting practices, I'll share a few things you may want to consider before becoming a consultant. 1) Consulting is rarely repeating the same task. Each project we work on is unique to the client. Although there will be similarities, you should enjoy working in an unknown space regularly. 2) You should enjoy traveling and meeting new people. Consultants are frequently on the road/in the air to meet with their clients face to face. This is a relationship business, so being able to build trust with your clients and your team is a must.

A good starting point would be to look on the websites of PwC and other big consulting organization. You can get a sense of the different types of roles. After a strategic decision has been made, these firms are typically engaged to figure out how to translate the strategy into tactical actions to achieve the desired outcome. For example, if a client has engaged Strategy Consultants and determined they will buy a business, that same client may call a Management Consulting firm to figure out how to actually execute and complete the transaction. This may include supporting Diligence (determining that the business has everything they say they do) and then planning on how the companies will actually be integrated once they close the deal (e.g., all agreements have been signed, payments sent, regulatory approval received).

I worked in digital consulting for years, straight from college. Normally, you're hired for some expertise you have because you can help your client move faster and more strategically with your advice. Straight out of college... I was there for to help the people who knew what they were doing. I learned a LOT. It's an excellent way to learn a lot in a shorter amount of time. Then eventually you become the person who is the expert who can help clients move faster and more strategically in whatever area you have expertise in.
As a career, you're typically at your client's beck and call, which can mean lack of flexibility and long hours. Depends on who you work for and how much you can advocate for your time. Good luck!

The cliche is that if you don't know what you want to do, you become a consultant. That's how broad it is. Everyone here has already listed many many examples of consulting jobs, so I don't have more to add on that front.
It's more important to find a niche in whatever consulting path interests you and gain a skillset and refine and hone that skillset to make yourself a subject matter expert (SME) because every situation you will be in will be different, and the client will be paying you and your own company will be depending on you to be the most knowledgeable person to address the situation, including sometimes in completely unknown territory.
