I don't have any experience with auto body work, but conventional wisdom suggests that if you want to be the best at something, it may suit you to get an apprenticeship with a body shop near you. This way, you can gain practical experience even before going to school for it. I believe there are many auto body shops in California that would be more than willing to help you.
