I think hours depend a lot on the type of restaurant and the type of shifts. I have known prep cooks with very reliable 7am - 3pm shifts who are able to maintain a pretty standard schedule. Most chefs work evenings and, unless you're the top of the hierarchy, you're likely to stay late cleaning the kitchen and closing things down. 8+ hour shifts are normal, but sometimes you can get four 10 hour shifts and have more days off each week.
Remember that fun weekend evenings are prime times for people to eat out, so service industry folks typically have their weekends during the week. It can be hard to keep in touch with friends and romantic partners who work standard office job hours when you're always at work whenever they're off, and vice versa.

Typically there are morning shifts (as early as 5 am) afternoon (3pm for dinner prep).
It really depends on the restaurant. Hotels usually have early shift arrivals with prep for lunch shifts and afternoon shifts for dinner service.
